Gluten-Free and Vegan Lemon Sugar Cookies

this is one of those recipes that you can make on a nice rainy day but enjoy at the pool on a nice sunny day!

the deets:
- ½ cup of vegan butter (i used soy-free earth balance)
- ½ cup of organic cane sugar or coconut sugar (i used coconut sugar!)
- 2 tablespoons of maple syrup
- 1 egg (to make vegan- use a ratio for 1 flaxseed egg)
- 2 tablespoons of lemon juice
- 2 tsp of lemon zest
- 1 tsp of vanilla
- 1 cup + 3 tablespoons of gluten-free flour
- ½ tsp of baking powder
- ¼ tsp of salt
1. add butter and sugar to a bowl and cream together for 1 minute with a whisk or mixer. then mix in your egg, lemon juice, lemon zest, and vanilla
2. fold in your flour, baking powder and salt. then add the bowl to the fridge for 30 minutes - an hour
3. roll your dough into ball shapes and add to a baking sheet (i slightly pressed down so I could get a flatter cookie) *make sure you spray or coconut oil your pan before placing the cookie dough*
4. bake for 10-14 minutes at 350 degrees and let them cool on the baking sheet and then serve!

these are absolutely delicious and I will definitely be making them again 🙌🏼🙌🏼
