Vegan Alfredo

Here it is!! The best vegan/gf fettuccine alfredo there is 🤩

What you'll need:
- Gf pasta
- 1 cup cashews
- 3 tablespoons of nutritional yeast
- 1 Lemon
- A pinch of salt
- A pinch of pepper
- 1.5 garlic cloves crushed up
- 2 tablespoons Vegan cream cheese
- 2 tablespoons butter
- 1/4 - ½ cup oat milk
- Splash of water
- *optional: 2 tablespoons of vegan parmesan

How to make:

1. Start boiling or soaking your cashews until they are swelled
In a blender, blend the cashews, lemon juice, nutritional yeast, salt, pepper, garlic, oat milk, and water until creamy then set aside.
2. Start boiling your water and cooking your pasta.
3. While your pasta is cooking, in a saucepan melt the butter and cream cheese until combined (*optional: add vegan parm and melt that in with the butter/cream cheese*)
4. Once that is melted, combine your cashew sauce with the butter/cream cheese mixture
5. Once your pasta is done, pour the sauce over it. You can add a splash of pasta water to make it coat the pasta perfectly.
6. Then enjoy!
