Vegan Buffalo Chickpea Taquitos

These are soooo delicious and are so simple to make! Perfect for any appetizer or lunch! Here’s how to make them ✨

Ingredients:
- 1 yellow onion
- ¾ cup buffalo sauce
- ¾ cup vegan cashew cheese (just blend 1 cup boiled cashews, 1 cup filtered water, nutritional yeast and lemon to taste 🤩)
- 1 can of chickpeas
- corn tortillas
What to do:
- start off by cutting up and sautéing your onion.
- then, drain and rinse your chickpeas and mash them up to your desired texture.
- then, add in your buffalo sauce and cashew cheese and mix.
- transfer that to your onions and mix in a sauté pan until it heats through.
- add some to your tortilla and roll (pro tip: heat your tortillas up so they don’t break when you roll them)
- add them to your air fryer at 390 degrees for 7 min. or to your oven at 375 degrees for 10 min.
- serve with vegan ranch or any dip of your choice and enjoy! ✨
