Vegan + Gluten-Free Lemon Blueberry Muffins

LEMON BLUEBERRY MUFFINS 🌞

ingredients:
- 2 cups oat flour
- 2 tbsp baking powder
- 3 tbsp maple syrup
- 3 tbsp melted coconut oil
- 2-3 tbsp of lemon juice
- 2 flax eggs (1 tbsp ground flax seed, 2 tbsp of hot water then mix and let sit till it’s jelly-ish)... you also can use 2 regular eggs
- 1 tbsp vanilla
- 1/2 cup almond milk (you might need to add more)
- blueberries

DIRECTIONS:
- mix your flax egg in a superset bowl set aside to set
- the mix all ingredients in a bowl
- pour into a muffin tin
- bake at 350 for 15-20 mins until golden

WASTE INFO:
- buy your oat flour, baking powder and flax seed in bulk
- buy your maple syrup, coconut oil, and vanilla in glass to recycle
- make your own almond milk
- buy lemon package free and juice it for lemon juice
- buy berries in bulk when they are fresh and freeze them for the rest of the year
